Rabbit featured in taste testsonsumer testing of processed rabbit meat is being conducted at the farm market at California State University, Fresno this summer. "Cooks" Jessica Weeks and Jeff Brown, students majoring in animal science, display samples of link sausage and cutlets offered to the public as part of recent taste tests. The sausage and cutlets, as well as Italian-style sausage and "fryers," are for sale at the farm market.

The testing is part of a project exploring new ways of marketing rabbit meat. Directing the research is animal science professor John Jacobs. The work is being conducted through the Center for Food Science and Nutrition Research (CFSNR). Call the center at (559) 278-5924 for more information.
